This process preserves a high concentration of valuable compounds, including polyphenols, flavonoids, and bioactive antioxidants. Health benefits
It is known that the fermentation process enhances the flavor profile of cacao and reduces bitterness at the expense of reducing the amount of healthy bioactive compounds that end up being broken down by the heat generated during the process with the intervention of microorganisms. Cacao Lavado is minimally processed, hence it preserves higher levels of flavanols, flavonoids, and other antioxidants compared to the fermented counterpart.
